Edible Canal
Presented at SIGN Living Lab's innovative horticulture conference, this immersive tasting experience highlighted duckweed as a super-protein ingredient for the future of our food system. The sculptural installation echoed the form of a Dutch canal, where this plant grows uninhibited. The familiar motif invited visitors to engage with the ingredient through sight, touch, and taste. Guests sampled a series of speculative snacks, each offering a playful and thought-provoking glimpse into how duckweed might be cultivated, celebrated, and consumed in the not so distant future.
